INGREDIENTS

  • ½ cup of coconut milk
  • ½ cup of pure pumpkin puree
  • ¼ cup of old-fashioned rolled oats
  • 1 tbsp pure maple syrup
  • ¼ teaspoon pumpkin spice
  • ¼ teaspoon ground cinnamon

DIRECTIONS

  1. In a small bowl, combine pumpkin puree, maple syrup and pumpkin pie seasoning. In another bowl, mix together the oatmeal, coconut milk and ground cinnamon.
  2. Take a mason jar and pour half of the pumpkin mixture on the bottom. Add the oats and top with the remaining pumpkin puree.
  3. Store in the refrigerator overnight and top with fresh muesli.

  • Steamed 1 cup of unsweetened vanilla almond milk (or milk of your choice)
  • 2 tbsp pumpkin puree
  • ½ teaspoon vanilla
  • ½ tbsp maple syrup
  • 1 cup of brewed coffee (or 1-2 shots of espresso)
  • Season with cinnamon and pumpkin pie

DIRECTIONS

Whisk the coffee, maple syrup, and vanilla. Top with steamed milk and cinnamon and enjoy!

INGREDIENTS

Muffin mix

  • 1 banana
  • ¾ cup of pumpkin
  • 1 cup of almond flour
  • ½ cup coconut flour
  • 3 eggs
  • 4 tbsp coconut oil
  • ¼ cup of honey
  • 1 tbsp baking powder
  • 2 tbsp pumpkin spice
  • Pinch of sea salt

Icing mix

  • ½ cup of cream cheese
  • 1 tbsp pure maple syrup
  • ½ teaspoon cinnamon

DIRECTIONS

  1. Preheat the oven to 350 degrees.
  2. Combine the banana, pumpkin, eggs, melted coconut oil, and honey in a large bowl. Mix on medium speed until all ingredients are well mixed. Add dry ingredients and continue mixing for a minute or two.
  3. Spray the muffin pan with nonstick spray and three-quarters fill each can with a mixture.
  4. Bake for 25 to 30 minutes or until the edges turn lightly brown and / or you test muffins with a fork and it comes out clean.
